Sherry is a fortified wine, made in Spain from three grape varieties: Palomino, Pedro Ximénez, and Muscat (Moscatel). Sherry wines produced in other countries often use other grape varieties.

Sherry differs from other wines because of how it is treated after fermentation. It is first fortified with brandy and then if it is to be a fino style a flor yeast is allowed to grow on top. The Oloroso variety is recommended for hardiness where the flower cannot grow. (In contrast, port wine is fortified with more alcohol than sherry, which inhibits the growth of any yeast.)

JEREZ DE LA FRONTERA or JEREZ for short, Scheris of the Moors, one of their strongholds in Spain, was a very important walled city. Today it is a busy town, and the center of the Sherry Trade.
