Do You Really Want to Reduce Cooking Time?

Cooking is probably one of the oldest activities or perhaps jobs that humans have done. It is my guess that man would have introduced the concept of cooking when he was a hunter and had to eat meat. In my mind, thousands of years ago, cave man would have spent days hunting and trying to find food so he could survive. His life would revolve around thinking about how he could feed himself so he could live. As it evolved, the barter system must have come to where it could trade and hence find some time to do other things. Nowadays, food is largely taken for granted and is a minuscule part of a person’s life. As it stands today, I’m not sure if it’s considered an important part of life. I think we have taken the concept of outsourcing and exchange a bit too far where we expect someone to almost prepare our meal and we either finish it or even worse, just reheat it. We found many other things to do and lost focus on the most important aspect of life – food. Well, I’m not a food fanatic but the reason why I believe food is a very important part of a person’s life is because it determines the state of health in your mind and body. As they say, health is wealth, and this is best appreciated when unhealthy!

Back to the old days of cooking, I remember one of the programs on the TV that showed a celebrity chef visiting India and cooking regional food the traditional way. He cooked meat in a pit filled with fire. The meat was well wrapped in banana leaves and all the spices were loaded on the meat. The banana leaf is supposed to keep the meat moist. My trip to my hometown reminded me of another traditional cooking method – clay pots! Seeing women cooking in clay pots over a fire outside the house tempted me to join them. Another traditional process involves fermenting certain foods. For example, in South Indian cuisine, certain sticks are allowed to ferment overnight and the bacteria actually ferment the food to aid digestion. I could go on about these traditional processes but have you noticed what they have in common? Time! They all take some time to cook but what else is a striking fact is that my ancestors who followed traditional cooking methods lived long and healthy lives. As our lifestyles change, so do our cooking methods. There is probably no home that does not have a microwave oven and few homes that do not have ready-to-heat food or food stored in the freezer. The microwave oven I’m sure is considered a blessing by many busy people who juggle work and family. It is challenging and I am no exception. I struggle to find enough time to cook good food so I bought a large microwave. And what do I think of it now? Well, here is a summary of some claims I have seen on some websites:

1. General advice is not to heat baby milk (breast or formula) in the microwave. The obvious reason is that uneven heating could burn the baby’s mouth, but also that the milk changes and some key elements of the milk such as vitamins are lost.

2. Scientists named Hertel and Blanc said they found that the consumption of microwave food caused a decrease in hemoglobin levels. They say that they also found that large amounts of radiolytic compounds are formed in microwave food and these cause deterioration of the blood and immune system. They were supposed to stop publishing the results by some powerful organization.

3. Russian scientists said they found that microwave energy caused changes in the cells of the food, whether it is vegetables or meat or milk, and created carcinogenic structures. It also affects the immune system and makes it harder for the body to fight cancer cells.

4. One would think that if it is all that bad for people, it would be forbidden. But he said that regulatory organizations such as the FDA, insist more or microwave energy does not flow and harm people around and also one of the popular benefits of using it that means less oil and no water so health and more conserved nutrients.

After reading these scary results, I think it is suicidal to continue eating microwaved food. Better to be safe than sorry. So, as I conclude this article, I have decided to sell my microwave oven. Instead, here are some things I plan to do…

1. Plan my meals for the entire week so that I have all the ingredients stored. Wherever possible prepare in advance such as chopping the vegetables, prepare and refrigerate the ginger garlic paste, make the base sauce and refrigerate.

2. Cook large batches over the weekend and freeze a couple of portions for me and my husband. Defrost it in the refrigerator in the morning I need it and heat it on the stove in the evening.

3. Use my convection oven whenever possible and try to reduce fat consumption by baking instead of frying.

4. Use traditional methods such as cooking in clay pots that also tend to increase flavor.

While it is entirely up to you to decide if you really want to reduce cooking time and go the modern way, I would avoid putting microwave recipes on my food blog.
