Taste the culture. When ready, it will not taste sweet. Rather it will have a slightly sour taste, with a hint of sugar. It may taste a little like wine. It should not smell yeasty, earthy, fruity, vinegary and pleasant.
Filter the kefir, keeping the culture for the next product you make. It will remain in a glass jar of water in the fridge for a certain time.
Drink kefir. It will ferment after bottling, so leave the lid on for a while, until you get the hang of this process. Kefir will keep for years, like wine, if you can keep it that long.
